Homemade eggnog is crazy easy to make (although it requires either a thermometer or a pinkie with a really keen sense of how hot 160F is).  And it tastes so much better than that heavy, eggy, storebought stuff.  In fact, I was ardently anti-nog until I made it myself and now I love it (when I make it…still hate the store stuff). Question:  I can never tell if my caramel is the color the recipe calls for.  It seems dark enough but when I pour it out it’s too light.  Is there a certain temperature to look for? I don’t ever go by the temperature for caramel; you can get too slavish to the thermometer, ignoring the fact that the sugar is smoking!  (And you may discover your thermometer is out of whack)  Instead,...
